The founders of Cava, Julii and Melina are planning their third Mediterranean-themed restaurant for Pike & Rose. Bouboulina, scheduled to start construction this winter, will anchor the development’s newest section with a steak-and-seafood-focused menu. (Bouboulina takes its name from a 19th century Greek naval commander who’s considered the first woman to attain the rank of admiral.) The trio of MoCo-raised restaurateurs — Ted Xenohristos, Dimitri Moshovitis and Ike Grigoropoulos — founded the publicly traded Cava chain, then went on to cook up local projects like Julii and Melina. Bouboulina is expected to open in mid-2024.
